Produziert werden im Weinbaugebiet Elsass vor allem köstliche Weißweine, welche meist nach ihrer Rebsorte benannt sind. Während reinsortige Weine andernorts in Frankreich erst in neuerer Zeit aufgekommen sind, haben sie im Elsass Tradition. Meist sind sie trocken, wenn auch ohne übermäßige Säure, denn durch die geschützte Lage des Gebiets reifen die Trauben gut aus.
